Real Healthy Muesli Bars

- 3/4 cup mixed nuts (roughly chopped) and seeds
- 1 ¾ cups rolled oats
- ¼ cup desiccated coconut
- 1/2 cup dried fruit, roughly chopped (e.g. cranberries, figs, dates)
- 1/2 cup natural peanut butter
- ½ tsp ground cinnamon
- 2 tablespoons maple syrup
- 1 egg, lightly beaten
Preheat oven to 160°C. Line a 20 x 20cm square baking tin with baking paper.
Layer nuts and seeds over the prepared tray and bake for 5-10 mins until golden.
Combine the peanut butter, cinnamon, maple syrup in a microwave safe bowl. Heat for 30-60 seconds to melt and combine.
Remove nuts from the oven and pour into a mixing bowl along with remaining dry ingredients. Add nut butter mixture and mix well. Add egg to combine.
Press mixture into prepared baking tin and bake for 25 minutes. Cool completely in the tin on a wire rack. Remove from tin and cut into 20 bars.
