Christmas Protein Truffles

Ingredients

1 cup peanut, almond or cashew butter

¼ cup honey or maple syrup

¼  cup rolled oats

¼ cup almond meal

¼ cup desiccated coconut

½ cup protein powder of choice – chocolate is best!

Extra coconut, cacao or seeds to roll in

Place the nut butter and honey/syrup in a microwave safe bowl, microwave for 10-20 seconds then mix to combine well.

Add oats, almond meal, coconut and protein powder. Stir well to combine – the dough should be slightly sticky, if it’s too wet add extra protein powder/oats (1 tablespoon at a time); if its too dry then add a splash of water (1-2 teaspoons at a time). Test by rolling it into a ball with your hands.

Roll heaped tablespoons of the mixture into balls then place on a lined baking tray. If desired, roll in extra seeds (eg. Chia, sesame), coconut or cacao powder.

Place in the fridge to set for 20 mins, then transfer to an airtight container and store in the fridge (or freezer).
